Cold storage (refrigeration and freezer)
Cold storage is designed to enhance the storage effect of food and can be divided into storage warehouses for raw agricultural produce for both processing and completed products.
Since the appropriate temperature for storage of the majority of vegetables is at about 0°C, it is essential for the storage facility to maintain a temperature of about 0°C.
Although the recommended storage temperatures for vegetables and fruits are in the range of 7~15°C, this temperature range can change depending on their processing. Fundamentally, temperatures of lower than 2°C are recommended for the storage of completed products
and this needs to be maintained continuously during the delivery and sale process until they reach the consumers.
In the case of a freezer warehouse, it is possible to suppress and prevent growth and development of decomposition germs and self-digestion enzymes, which are the two key elements of decomposition of food if they are stored at temperatures below -20°C. Such storage at very low temperature has decomposition suppression action by reducing the quantity of free water and level of activation of water due to the freezing of more than 80% of the moisture.
Recently, supply of assembly-type panels has become generalized. Moreover, in consideration of not only the technological aspect but also the external appearance and application of HACCP, panel-type is more appropriate, and it is necessary to install a rack for mops and protective guards inside.
